Wallabag is a mature self-hosted alternative to Pocket and Instapaper that saves full article content for offline reading. It features mobile apps for Android and iOS, browser extensions, e-reader export (EPUB/PDF), and Kindle delivery. Content is stored in your own database with no third-party tracking.
